Summer Energy Drink -- The Butter Milk/Lassi

The drink that is almost available at every house and very cost effective which can be done in less time compared to the typical fruit juices. This energy drink in India is called as BUTTER MILK/ CHAAS. Chaas is prepared by simply churning or blending out the butter milk or curd.

Chaas is considered to be one of the best sources available at home to cure digestive problems i.e. it acts as a digestive. So don’t worry when take a heavy lunch or dinners, just have a glass of fresh butter milk and that’s it, your fullness of stomach will be subsided.

Butter milk not only aids in digestion, but also considered as one of the best drink to cool down the body temperature, that’s the reason people living in hot regions or warmer conditions prefer to take Chaas, to lower down the body temperature. Also believed that people in India include Butter milk regularly in their daily routine.

The preparation of Chaas varies from place to place. People prefer to add sugar and salt to chaas /butter milk to improve the palatability. Apart from adding sugar and salt, in some places people add chat masala, roasted cumin seed powder, fenugreek powder, black salt, pepper, lime juice, mint leaves, coriander leaves to have a refreshing energy drink. However its upto the consumers whether to refrigerate the drink or consume it without cooling. Generally consumers take it when the Chaas is refrigerated.


Here are few Butter milk recipes :

Masala Butter Milk
  1. 2 cups of fresh curd prepared at home or purchased from grocery store.

  2. 2 small sized green chillies, which are washed finely chopped.

  3. Freshly chopped CORIANDER LEAVES which are thoroughly washed (1 small bunch).

  4. Freshly cut CURRY LEAVES (4 leaves).

  5. 1 tablespoon of black salt/common salt.

Method:
  1. Take the fresh curd and without adding any water to it, churn it or blend it with a blender properly to get a creamy liquid, then add all the ingredients listed above to the creamy liquid and blend it at low speeds for 5 min.

  2. Take chilled water if available or normal water and add to the above liquid and blend for another 10 min at low speeds, till froth develops.

  3. Refrigerate the butter milk, and before serving don’t forget to add freshly chopped coriander, mint, curry leaves on the butter milk.

Mango Lassi:


Ingredients:
  1. 1 Ripened MANGO.

  2. Curd (120 ml)

  3. Sugar.(to taste)

  4. Condensed Milk (30ml)

  5. Almonds (5No)

  6. Pistachios.(10 No)

  7. Kaju (5 No)

  8. Walnuts (few)

  9. CARDAMOM/ELACHI (3No)

  10. WATER quantity sufficient for one serving.

Method:
  1. Take a fresh ripened mango, peel the skin and cut the mango in to small pieces, and put them in the hand BLENDER and blend it for 2 min till, a thick JUICE OF MANGO is formed.

  2. To this juice add fresh curd, sugar (to taste, can avoid if not required), 20 ml of condensed milk, cardamom powder, water and blend for 10 min at low speeds using blender.

  3. Transfer the preparation to a glass and sprinkle the finely chopped almonds, pistachios, kaju and chill it for 30 min and serve.
